Atlantic cod is one of the most popular commercial fish species, harvested from Greenland to North Carolina. Recipes for this fish abound and are limited only by the cook’s creativity. This is a simple but elegant recipe.

Ingredients
- 4 [4 to 5 oz] Moody’s cod fillets
- ¼ C butter softened
- ½ C Parmesan cheese grated
- 3 T mayonnaise
- 2 T lemon juice
- ¼ t onion salt
- 5 dashes hot sauce always optional
Instructions

Pre-heat oven to 375°F.

While the oven is heating, mix the topping of butter, cheese, mayonnaise, lemon juice, onion salt, and hot sauce in a bowl and set aside.

Place cod fillets in a lightly oiled baking dish in the middle rack and bake for 9-11 minutes until the fish becomes opaque and flakes easily in the middle.

Remove cod from the oven and spread the topping mixture on the top.

Set the broiler to High and broil the fish until the topping is browned and bubbly.

Serve with your favorite vegetables and potatoes or simply on a bed of greens with a balsamic vinaigrette.
