It’s zucchini time and my crop is abundant. This curried zucchini recipe is one of my favorite sides in the summer. I pair it with yellow squash as that too is prolific this time of year. If you don’t have both veggies, use just the one; it’s good either way.
- 1 medium zucchini
- 1 medium yellow squash
- ½ onion cut in slices
- 2 T olive oil
- 2 t curry powder
Pour the olive oil into a skillet, add the curry. Stir to mix and cook about 30 seconds.
Add squash, zucchini and onions, sauté.
Add salt to taste and cook until soft, brown, and done.
