Garlic Shrimp is always a favorite hors d’oeuvres. This bite size version is perfect for any entertaining venue.

Garlic Shrimp and Avocado Crostini
Servings: 6 people
- 12 large peeled and deveined raw shrimp
- 12 baguette slices about ½” thick
- 6 T olive oil divided
- 2-3 garlic cloves minced
- 1 avocado
- 1 t garlic powder
- Juice of ½ lime
- ¾ t smoked paprika
- ½ t cumin
- Fresh ground black pepper
Pre-heat the broiler
In a medium bowl add 3 tablespoons olive oil, minced garlic, paprika, cumin salt and pepper. Add and coat the shrimp. Set aside.
In a small bowl, mash the avocado mixing with the lime juice and salt and pepper to taste. Set aside.
Mix 3 tablespoons of olive oil with the garlic powder and brush each side of baguette slices with the mix.
Transfer the shrimp and remaining oil and mix to a large skillet and cook until the shrimp are pink, turning once or twice, about 5 minutes.
Broil crostini until brown, turn, brown other side
Spread mashed avocado on each crostini and place shrimp on top. Serve immediately.
