Garlic Shrimp and Avocado Crostini

Garlic Shrimp is always a favorite hors d’oeuvres.  This bite size version is perfect for any entertaining venue.

Garlic Shrimp and Avocado Crostini

Ingredients
  • 12 large peeled and deveined raw shrimp
  • 12 baguette slices about ½” thick
  • 6 T olive oil divided
  • 2-3 garlic cloves minced
  • 1 avocado
  • 1 t garlic powder
  • Juice of ½ lime
  • ¾ t smoked paprika
  • ½ t cumin
  • Salt
  • Fresh ground black pepper
Instructions
  1. Pre-heat the broiler
  2. In a medium bowl add 3 tablespoons olive oil, minced garlic, paprika, cumin salt and pepper. Add and coat the shrimp. Set aside.
  3. In a small bowl, mash the avocado mixing with the lime juice and salt and pepper to taste. Set aside.
  4. Mix 3 tablespoons of olive oil with the garlic powder and brush each side of baguette slices with the mix.
  5. Transfer the shrimp and remaining oil and mix to a large skillet and cook until the shrimp are pink, turning once or twice, about 5 minutes.
  6. Broil crostini until brown, turn, brown other side
  7. Spread mashed avocado on each crostini and place shrimp on top. Serve immediately.
