I think pork tenderloin is so underrated. This is such a simple recipe and so, so delicious. The mustard sauce adds an elegant touch!
- 2 Moody’s pork tenderloins
- 3 T olive oil
- 2 T St. Elmo's seasoning or your favorite
- ½ C sour cream
- ½ C mayonnaise
- 1 T dry mustard
- 1 T chopped scallions or onions
- 1½ T white wine vinegar
Preheat your grill to medium-high heat.
Rub the tenderloins with olive oil and then rub on the seasoning.
Grill the tenderloins by turning so as to get a nice sear on all sides.
Remove from grill when the internal temperature is 140°F to 145°F.
Cover with foil and let rest for 5 minutes.
Mix all ingredients in a medium-size mixing bowl and let stand for at least 4 hours - let stand on counter, NOT in fridge.
Use as a sauce to taste with tenderloin however you prefer - pour on top, use for dipping, etc.
