Bacon-Wrapped Filet Mignon
Moody's platter bacon and filet mignon together in an easy and delicious recipe - what could go wrong? This combination is hard to beat and the recipe is easy enough for a weeknight, yet perfect for a sophisticated dinner party or holiday gathering, too.

2 Moody’s filet mignon steaks (about 2 inches thick)
2 strips Moody’s platter bacon
2 T extra virgin olive oil
Salt and freshly ground pepper
Allow steaks to come to room temperature, about 60 minutes.
Pre-heat the oven to 450°F.
Wrap the bacon slices around each filet and secure with butcher’s twine or a toothpick. Rub top and bottom of filets with 1 T olive oil and generously season with salt and pepper.
Using a cast iron skillet, bring the remaining 1 T of olive oil to high heat. Put the filets in the skillet and sear each side for about 2 minutes until you get a nice crust.
Remove skillet from the stove and place in the oven. Cook times will vary based on thickness of the steaks and sear time. For medium-rare, remove at 118°F and allow to rest, covered with foil, for at least 5 minutes. The steak will continue to cook while resting and you will have a perfect medium rare steak.
