Oh So Simple Grilled Lamb Chops

Lamb is one of my all-time favorites; I like the robust flavor and do whatever I can to make certain the innate flavor shines through. This is one of those recipes and it’s easy!

  • 4 Moody’s lamb chops

  • 3 T olive oil

  • 1 garlic clove

  • 1 sprig fresh rosemary (if you’re not a rosemary fan, use fresh thyme)

  • salt and pepper

  • juice from a quarter to half lemon

  1. Mix the olive oil, rosemary, salt and pepper and lemon juice in a small bowl.

  2. Coat the lamb chops on both sides with the mixture and let sit for 30 minutes or more while the meat is coming to room temperature.

  3. Preheat your grill to medium high heat.

  4. When both the chops and grill are ready, sear the chops for 4 to 5 minutes on each side, depending on thickness. Medium rare is best for lamb.

Wasn’t that easy?

Wine pairing: Lamb holds up to the biggest and boldest of wines. Select a nice Cabernet Sauvignon or Shiraz.
