Penne Pasta with Lamb, Tomato, Feta Cheese and Cumin Sauce
If you like the big bold flavor of ground lamb, you will love this dish.
🍷 Wine pairing: Lamb does well with a full-bodied red such as a Cabernet, a Syrah or a Côtes-du-Rhône.

Ingredients
1 pound ground lamb
¾ pound penne pasta
1 ½ C (one 16 ounce can) crushed tomatoes in thick puree
1 onion chopped
2 garlic cloves, chopped
1/3 C fresh mint, chopped
1/3 C crumbled Feta cheese
2 T cooking oil
1 T ground cumin
1 ¾ t salt
½ t fresh ground black pepper
Instructions
In a large skillet, heat the oil over moderately low heat.
Add the onion and cook, stirring occasionally, until translucent - about 5 minutes.
Add the garlic and the lamb and cook until the lamb is no longer pink – about 3 minutes.
Stir in the cumin, tomatoes and salt; cover and simmer for 15 minutes.
In a large pot of boiling, salted water, cook the pasta until just done – about 15 minutes. Drain the pasta and toss it with the sauce.
Plate the meal and generously sprinkle with the chopped mint, crumbled Feta and freshly ground pepper.
