Skewered Lemon Chili Shrimp
Prep Time: 15 mins | Cook Time: 5 mins | Marinade Time: 2 hrs | Servings: 6 people
Ingredients
2 garlic cloves minced
3 T fresh lemon juice
2 T finely chopped cilantro
1 T honey
1 T soy sauce
½ T Chinese hot chili sauce
½ inch piece of fresh ginger grated
20 Moody’s peeled and deveined raw shrimp
20 wooden skewers 6 inches
Instructions
For the marinade:
Combine the first 7 ingredients in a non-metallic bowl
Add the shrimp and coat well
Cover and refrigerate for at least 1 hour
Soak the wooden skewers in water for 30 minutes
Cooking:
Pre-heat broiler
Thread 1 shrimp on each skewer
Broil shrimp for about 2-3 minutes per side or until they turn pink and lose their transparency
Serve warm or room temperature
