Skewered Lemon Chili Shrimp

Prep Time: 15 mins | Cook Time: 5 mins | Marinade Time: 2 hrs | Servings: 6 people


Ingredients

  • 2 garlic cloves minced

  • 3 T fresh lemon juice

  • 2 T finely chopped cilantro

  • 1 T honey

  • 1 T soy sauce

  • ½ T Chinese hot chili sauce

  • ½ inch piece of fresh ginger grated

  • 20 Moody’s peeled and deveined raw shrimp

  • 20 wooden skewers 6 inches

Instructions

For the marinade:

  1. Combine the first 7 ingredients in a non-metallic bowl

  2. Add the shrimp and coat well

  3. Cover and refrigerate for at least 1 hour

  4. Soak the wooden skewers in water for 30 minutes

Cooking:

  1. Pre-heat broiler

  2. Thread 1 shrimp on each skewer

  3. Broil shrimp for about 2-3 minutes per side or until they turn pink and lose their transparency

  4. Serve warm or room temperature
