Basic Sautéed Chicken Breasts

This is the basic method for a simple, easy and delicious meal. It’s a recipe you can modify according to your tastes. Flattened chicken breasts cook quickly. Once you’ve done it, you’ll return to this method over and over again.

  • 2 Moody’s boneless, skinless chicken breasts (pounded flat (to promote even cooking))

  • ¼ t Kosher salt

  • ¼ t freshly ground black pepper

  • 1 T canola oil

  • 1 to 2 garlic cloves (minced)

  • 2 T chicken broth (canned or otherwise)

  1. Rinse chicken and pat dry.

  2. Sprinkle chicken with salt and pepper.

  3. In a large skillet, heat oil over medium-high heat until hot; add chicken and garlic. Cook, turning frequently, 15 minutes or until chicken is no longer pink in center.

  4. Add broth to chicken and cook for an additional 15 minutes.

Bon Appetit! Suggested wine pairing: A Bordeaux Blanc pairs nicely with this meal as would a milder, less oaky Chardonnay.
